Steps for making a mother of vinegar in your vinegar maker
The necessary equipment
To make a good vinegar, you don't need a lot of equipment. But the most important thing is to have a good quality vinegar maker. This is an essential element! There are two main types of vinegar maker: one made of oak wood and one made of ceramic, more precisely stoneware. These models promote the circulation of oxygen in the vinegar maker, which is essential for a successful vinegar. You can find on our site some models of vinegar makers that we recommend and which have already proven themselves for a long time! For making the mother, a simple container may be enough.
Next you need a good bottle of wine! You can choose red, white or rosé wine, it doesn’t matter! What is important is to choose a young wine. In fact, the younger a wine is, the faster the vinegar mother formation process will be. You can choose to put only one bottle but also several bottle bases. You can mix Bordeaux with Côtes du Rhône or more Mediterranean wines.
The realization of the mother
To start making it, put your wine or your bottle bases inside the vinegar maker or your container. Be careful not to fill the vinegar maker and always leave at least 1/3 free to allow the preparation to oxygenate.
The preparation must then be left in the vinegar maker in the open air for a period of more or less 4 weeks depending on the conditions (temperature, age of the wine, etc.).
You will then see the mother begin to form little by little! Stop this process when the mother has become substantial enough. Congratulations, you have just made your first vinegar mother! Namely that a very imposing mother can be separated in two. You can thus start the preparation of two different vinegar recipes simultaneously or share one of your knowledge.
Wait 2 months and draw off the vinegar which you can flavor to your taste (thyme, rosemary, chili pepper, garlic, blackcurrant...).
Never forget to close the lid.
